Interacting with other players—in this case, fighting them—has always been a bit of a sandbox in Souls games. You can carefully tailor your character and equipment, polishing your skills and stats in anticipation of thrilling combat, sure, or you can side with mismatched gear and precarious locations with the sole intent of screwing with bewildered players, laughing all the while.
